Instructions
  1. Pre-heat oven to 300° F
  2. Soften butter and slowly add the flour and sugar to the bowl. (Personally, I used a mixer but if you can easily mix by hand).
  3. Once all mixed together, it should have a velvet texture. Scoop a manageable amount from the bowl and roll it into a ball, placing it on a lightly floured surface for rolling out.

  4. Roll out to desired thickness. My tip is for any shape cookie cutter other than a round shape is .25”. This seems to be the best thickness for holding shapes of your cookie cutter.

  5. Place on a baking sheet with parchment paper, approximately 1” to 1.5” apart and place in the oven.
  6. Bake for approximately 10-12 mins or until you see the edges going a golden brown. Everyone’s oven is different so keep an eye out.
Recipe Notes

I use Earth Balance Vegan Butter but for those die-hards shortbread traditionalists, you can use regular butter.

Also, I’ve swapped white sugar out with brown sugar before, and it gives it a caramel taste to the shortbread.
